What is the difference between eggs?
We are proud that all of our eggs are laid by happy, healthy hens.
Free Run Eggs are hens in the open, cage-free environments roaming freely in an open concept barn produce free run eggs.
Free Range Eggs are produced by hens roaming freely with access to the outdoor.
Grain Fed Eggs are hens that have been fed a special grain diet.
Omega 3 Eggs have been produced by hens fed a fortified multi-grain diet in order to enhance essential nutrients like Omega 3.
Organic Fed Eggs are laid by hens fed 100% certified organic feed.
Are eggs healthy? Are eggs good for me?
Eggs are one of nature’s most nutrient-dense foods. One large egg contains 6g of the highest quality protein, many vitamins and minerals, and only 70 calories.
What nutrients are in an egg?
The egg yolk provides 3/4 of the calories, all/most of the fat, phosphorous, iron, zinc, vitamins B6, B12 and A, folic acid, pantothenic acid, choline and thiamin, and about half the protein and riboflavin of the whole egg. The rest of the nutrients are found in the white. Egg yolks are one of the few foods naturally containing vitamin D. An egg yolk contains only 195 mg of cholesterol and 5g of fat, of which 1.5g is saturated fat.
Are brown eggs more nutritious than white eggs?
No. Both white and brown eggs have the same nutritional value and cooking characteristics. Shell colour depends on the breed of hen.
How long do eggs last past the best before date?
Raw shell eggs will keep in the refrigerator without significant quality loss for up to three weeks after the Best Before Date.
Keep your eggs as fresh as possible by storing them in the main body of the fridge (not on the door) in their original carton.
What are Omega-3 eggs?
Omega-3 eggs are from hens that are fed about 10-20% more flaxseed, so they produce eggs containing a higher level of omega-3 fatty acids. A single Omega-3 egg contains approximately 1/4 – 1/3 of the recommended daily intake of omega-3 fatty acid.
How can I tell if my eggs are fresh?
The easiest way to tell if your eggs are fresh is by checking the Best Before Date.
If you drop an egg into water, a fresh egg will sink, while an older egg will float. As an egg ages, the air cell inside increases, which causes it to float.
What makes some eggshells thinner or thicker than others?
As a hen ages, the eggs that she lays get gradually larger. However, the calcium content deposited in the shell remains the same despite the size of the egg. So, the eggshells become thinner as the hen ages.
Why do some eggs have dark yolks and other have pale yolks?
Yolk color is entirely dependent on the type of feed the hens eat. Wheat-based feed tends to produce lighter yolks, while corn-based feed tends to produce darker yolks.
The yolk color does not affect the flavor, quality, or nutritional value of the eggs.
Why are some hardcooked eggs hard to peel?
A hard-to-peel hardcooked egg means that it is really fresh! If the egg is very fresh, air has had very little time to enter the pores in the shell, and get between the shell and the shell membrane. The membrane allows the egg white to cling tightly to the shell. Use eggs that have been in your refrigerator for at least a week for easier peeling.
Should I limit the number of eggs I eat because of the cholesterol in them?
There is no reason for a healthy, low-risk person to limit their egg consumption. The cholesterol in eggs is dietary cholesterol, which has little effect on most people’s blood cholesterol. Excess saturated and trans fats are far more concerning than dietary cholesterol.
What’s the white stringy thing in the egg, is that safe to leave in?
The stringy white thing is call Chelaze, it is a twisted thick strand of protein/egg white, that is perfectly safe to use.
Is it okay to eat eggs with a blood spot in it?
Yes, it is perfectly okay! These tiny spots do not indicate a fertilized egg. If desired, the spot can easily be removed with the tip of a clean knife prior to cooking.
Why are eggs different sizes?
Egg size is related to the age of the hen — as a hen gets older, she lays larger eggs.
At home, what’s the best way to store eggs?
Refrigerate eggs immediately in the main body of the fridge, ideally at 4 degrees C. Store eggs in their original carton with the large end up (helps yolk remain centered). Leftover raw egg whites and yolks should be put in an airtight container and stored in the refrigerator immediately. To prevent yolks from drying out, cover them with a little cold water. Drain the water before using.
Can eggs be frozen?
Yes, you can freeze eggs! First, crack the egg and remove the shell, then place the raw egg in an airtight container, and into the freezer. If you want to freeze just the yolk, add a pinch of sugar or salt to prevent the yolks from gelling.

Once you log into the drop site schedule, and pick where to pick up, you will find the email address to EMT the contact.
Do I have to be at the drop site at the exact time?
Yes, we ask that you be there at the between the time stated for the drop site you selected. We value everyone’s time and must keep to our delivery schedule for the rest of our drop sites.

You can join one of our monthly drop sites to pick up your order. You can pick up directly from our farm store located in Calmar, AB.
