Apple & Bacon Stuffed Pork
This recipe will be a family favourite in not time. Kids and adults enjoy it, and it is easy to make.
Ingredients
- 4 Bone-in pork chops, 1" thick
- 2 tbsp Ghee, lard or butter
- 2 Medium baking apples Gala is my favorite, peeled & diced into 1/2" cubes.
- 10 Strips bacon diced
- 1 Red Onion diced
- 2 Cloves of garlic minced
- 4 Fresh sprig leaves finely chopped
- 1/4 tsp Sweet hungarian paprika
- 1 tbsp Lemon or lime juice
- Salt and pepper to taste
Instructions
- *evenly diced ingredients helps them to cook evenly
- Pierce fatty side of pork chop and slice "pocket" about 5" long and 3" wide into each.
- In medium pan, melt ghee, lard or butter over med-high heat. Add apples, bacon and onion until onion is softened and bacon crispy - approx. 8 mins.
- Add garlic, sage, Hungarian paprika & lemon juice to pan, and toss as stuffing cooks - approx. 2 mins.
- Remove from heat, transfer to a bowl and set aside.
- Add salt & pepper to each pork chop, stuff with lots of stuffing, and use toothpick to close - half of stuffing should be left over.
- Sear pork chops in hot pan over medium -high heat - 4-5 mins per side.
- Transfer to skillet in 350 degree coven and bake uncovered for 30 mins - until centers reach 140 degree Fahrenheit.
- Remove from oven, rest for 5 mins. Spoon remaining warm stuffing on top o feach chop before serving. Enjoy with a side of steamed vegetables - our favourite's are beans or broccoli. Enjoy!
